Family Movie Night

Sundays seem to be the only time that we are able to have time as a family without friends here too late.  We pick a good movie, I make treats and we sit to enjoy good food, family and a good movie.  Tonight we are watching Karate Kid.  I made a cake from a box....GASP!!  I know....BAD baker but in my defense, my kids LOVE to have the seasonal cakes and frosting that you get from Betty Crocker.  They say they like homemade better :)

Tonight we are having cake and ice cream with homemade fudge and caramel sauce (that's why it deserves a spot on my blog :) )

Hot fudge sauce
1 cup butter
1/3 cup unsweetened cocoa powder
3 cups sugar
1 12oz can evaporated milk
1 teaspoon vanilla

Combine butter, cocoa, sugar and evaporated milk in saucepan over medium heat.  Bring to a boil and cook for 7 minutes.  Remove from heat, stir in vanilla. 

  Carefully pour mixture into a blender and blend for 2-4 minutes.

*I have made this before and not blended it, it does make a difference when you do*




Caramel Sauce

1 cube butter
2 cups brown sugar
1 cup half and half
dash salt
1 tablespoon vanilla

Heat first ingredients over stove on medium/low heat, stirring constantly with a whisk.  Cook for 7-10 minutes until mixture starts to thicken.  Remove from heat and add vanilla.  Cook for one more minute.  Put in fridge for a few minutes to set then serve over ice cream or other desserts.
